purple basil, my favorite!

one of my favorite ways to spend saturday mornings is at the farmers market. everything is so fresh and people are so nice. i picked up some beautiful kale, melons, gypsy peppers, purple bell peppers, onions all organic and locally produced.

taco salad, sesame truffles

i assembled a taco salad with organic corn (so good fresh and raw!) and hatch chiles from new mexico. i also recycled the nut meat recipe from ani phyo's blog.

i made these truffles with no recipe and they came out amazing. they consisted of raw cacao, shelled hemp seeds, pecans, dates, and a few other things.

i used the recipe for the cheese from choosing raw! to spread on the sprouted grain buns! i also topped with tons of veggies and sliced a huge avocado wedge and placed it in the middle.

and for my late night sweet tooth i assembled a mini raw chocolate pie. the crust was sweet and salty and amazing tasting. i filled the crust with chocolate avocado puree and might i say it was the best way to end a long day! what beautiful food i'm so grateful of!

today we went to the amusement park. it's been awhile since i've been on roller coasters and all that, but i had a very good time. the main time spent there was at the wizarding world of harry potter which was so crazy! all and all, the park was fun, but i did learn how much tolerance/ patience (they go hand in hand) i have for social situations like that.

apparently 40,000 gallons per day of natural mineral water is pumped a day. it was really hot and rejuvenating!

the drive home was super calm and the fog was lovely.

after a long day of work, my friends came and picked me up for a hot springs get away. it was perfect due to the rainy somewhat cold weather. it was nice to relax and get in touch with people i really enjoy spending my time with. it was super magical between the mineral pool and the drive through the mountains.

tonight was so fun. we had an all raw dinner complete with: raw burgers, rawcamole and veggies, salad and some of my chocolate truffles. not only did we eat amazing food, but we were at red rocks amphitheater. it's was so beautiful. we watched raising arizona for film on the rocks which is a super funny movie. it was nice to spend time with old friends and my new ones to!

hospital & ice cream

first, i was in the hospital all evening yesterday. i was a miserable mess of a person and could barely stand or think when i called 911. after many tests (including an icky SPINAL tap) all is fine from the suspected spinal meningitis my doctor thought my symptoms pointed fingers to. i (only) walked away with a severely low deficiency of potassium and a pretty bad viral infection. i'm still pretty nauseous, sick feeling and my back is pretty uncomfortable due to needles being in it.

so what better then raw, homemade (unprocessed, no sugar) vegan chocolate cherry banana ice cream (complete with raw agave chocolate syrup) to come home to? take that hospital food. and with (only)! three bananas ( & 1/2 cup organic rainer cherries) in this ice cream i'm sure to gain the right potassium levels in no time. wow i went parenthesis crazy in this post!

you get to realize how happy you are. you can't explain the gratitude you have for the feelings of bottomless enjoyment. when you don't have to second guess any of your intentions. when they're clear and you have a path to follow. the days become perfunctory and the negative forethought's completely diminish.

i'm grateful for the health and guidance i have made for myself, and the family that encourages the progress to continue on.

before i sleep and when i wake up, my glasses are at my side. these tools help me see the world around me. lately the world has been a little rough around the edges. despite how melodramatic my life may seem at times i still find myself waking up each day grateful. grateful, for the morals i hold true, the family by my side and all of the conscious and beautiful moments life has unfolded for me. my days have opened new doors and the experiences inside them are up for grabs. why is it that we play it safe, or not take what's in front of us?
